Pesciugatore® is the unique cabinet for Dry Ageing Fish with a controlled pH system for the smoking and curing of sea salami and also cooked Tuna and Squid Mortadella. It is designed, manufactured and patented 100% MADE in ITALY.
The seasoning cabinet specifically reproduces a series of microclimates ideal for curing all types of fish. The Cabinet series can be used for smoking Salmon, Swordfish or Tuna while continuously controlling pH levels. Apart from Dry Aging Amberjack, Pesciugatore® is used to cure raw fish salami such as Salmon Speck. The cooking version, in addition to the Dry Aging, Maturation and Smoking of fish, it cooks all types of cooked sea salami, such as cooked Tuna ham or Tuna, Squid and pistachio Mortadella.
The fish drying Pesciugatore® cabinets and walk in cold rooms are built entirely of AISI 304 stainless steel with a scotch-brite finish both internally and externally to protect food contact and contamination. The Cabinets can be incorporated into furnishings or walls. The doors are completely in AISI 304 stainless steel; all have a large double-glazed glass with UV protection and are equipped with lock and key to allow use both in the laboratory and in the sales area.The exterior can be customized from a wide range of colors and coatings by our skilled Italian craftsmen. Thanks to the Fumotic® patents and Climacure® as standard on all Dry Aging cabinets, it guarantees the perfect production and management of adjustable humidity.
